Lime and Lemon Balm Bliss Balls

Beautiful fragrant lemon balm is a member of the mint family. The volatile oils, bitters and tannins contained in the leaves are calming and relaxing to the nervous system and stomach. It also has anti-viral properties. It is easily grown in any garden lending its beautiful, sunny, cheerful scent to any who run their hands through her. It is a great attractant for bees and really useful in the vegie garden to assist with pollination. Here is a yummy recipe that is sure to zing up that afternoon cuppa. Enjoy!
Ingredients:
(Makes 20)
1 1/2 cups natural cashews
1 1/2 cups shredded coconut
1/4 cup fresh lemon balm
1 lime juice and zest
2 tbsp honey
2 tbsp coconut oil melted
In a food processor or Nutribullet, blitz the cashews to a fine powder. Add the coconut and blitz again. Place these ingredients in a bowl. Put the lemon balm, lime juice, zest and honey into the processor and blend until the leaves are finely chopped. Add this to the cashew mix. Add the coconut oil and mix thoroughly with a spoon. Use your hands to roll teaspoon size amounts into balls. Place on a tray and into the freezer for 1/2 an hour. Take them out and ENJOY! You can store in the freezer and bring out as needed for 3 months.
